The winery today

It is equipped with state-of-the-art technology. We can make over two million kg of white wine. We ferment in stainless steel deposits at a controlled temperature, under 17°C. This allows us to obtain fresh, fruity, harmonic and elegant white wines. We ferment separately each of our varieties to obtain their maximum potential.

To create our Verdejo Fermentado en Barrica (fermented in cask), we use oaks of different cooperages. The result is a wine that respects the fruitness of the young verdejo, but that has greater complexity, glycerides and balance between acidity and alcohol content.


The wine cellar of Inquisition

We continue maintaining and using the old underground wine cellar that in the old times belonged to the Church. Here the grapes from the tithe were deposited. This land’s connection to wine was born in ancient times. An extraordinary evidence is our underground wine cellar. An authentic popular architecture treasure of past centuries.

It is an underground hollow space that descends about 15 meters. A framework of brick galleries accommodates great oak barrels (of about 250 to 500 jugs in capacity) in which the wine was produced and stored.

A clever ventilation system, based on zarceras (ventilation shafts) that went outside, allowed airing the spaces and providing a way out for the toxic gases when must was fermented.
