Bright straw colour. Powerful nose, expressive, mature fruit, tropical notes, sweet spices and fine cocoa. In the mouth: flavourful, fruity, unctuous, good acidity, persistent.
Fresh cheeses, semi-cured cheeses, garden salads, oily fish, seafood, rice, etc.
The Verdejo variety from old vines is fermented after the harvest with its lees in new French and American oak casks. Every two weeks these lees are moved so they have more contact with the wine. They remain in the cask for twelve months and another twelve in the bottle, before being marketed.
